Roasted Pork Tenderloin With Lemony Potatoes And Zucchini!

The third meal from Hello Fresh was the Pork Tenderloin. I waited to have this meal last simply because I knew the vegetables that went with it would last longer in the frig than the other two recipes. 



Everything all set out and ready to go. You might notice my new knives in the background. On Friday I went back to Sam's Club because I had forgotten to look in their business section for knives and I'd really been wanting to pick some up. I have 2 chef's knives for only $14 and 4 paring knives for $10. From the reviews online they are really good knives for the price. I'm not about to go out and spend over $100 on one knife! I got to test them out for this recipe and they worked great. 



First thing on the recipe card was to cut up the potatoes. I honestly think they put enough potatoes in the box for a 4 serving meal...that's a bunch of potatoes for just 2 people. Not that I'm complaining.....I'd rather have more than less...right! 



Next was chopping up the zucchini and the red onion. Again I felt like that was a ton of red onion for just two people, but it's not like they were going to give me a half of a red onion. 



The recipe called for me to start out cooking the pork on the stove and then it finished in the oven on the same cooking sheet as the zucchini and onion. 



Lemon, garlic, cilantro and butter all ready to go. 



Side note: I love how everything is packaged and ready for me in these small cardboard boxes. They work great for putting all your garbage in. No running to the garage can or dirtying a bowl. I just piled everything in there, dumped it afterwards and then threw the box in the recycle. It's the little things that make me happy! 



The zucchini and onions are ready to go in the oven...just waiting on the pork. 



While the veggies and the pork finished cooking in the oven I prepared the sauce. This was butter, garlic, lemon juice and demi glaze.



Once everything was done I piled some potatoes on the plate followed by zucchini and onions. I cut the pork tenderloin up and placed that on top, drizzled the demi glaze and finished it off with the chopped cilantro and a squeeze of lemon juice. 

This was so good! It was definitely one of those recipes where I was thinking how many flavors can you add to one dish....lemon, garlic, demi glaze, cilantro! I mean it really honestly seemed like it was going to be too much! That is what I love about trying new recipes and being given all the ingredients. If I had found this recipe I would have probably made it, but I would have substituted the red onion for a white one and then parsley instead of cilantro. I'm sure it would have still been good, but I would have been missing out on all that flavor. 

So overall what do I think of Hello Fresh....I'm super impressed! These recipes are so amazing in flavor and they feel like something I would order at a restaurant and yet they were super easy to make and fun! None of the recipes I made took over 30 minutes so that was impressive as well! I honestly think this might be something we continue to do once a month. It's a great way to give yourself a break and it's really nice to add in new things to your recipe rotation.
